Tajima is a marble Wagyu breed. Even within the Japanese Black breed, this line is most renowned for producing the highest marble percentages and the best quality marbling. They typically have a smaller frame, slower growth rate, and are expected to yield higher-quality meat. Tajima originally comes from Hyogo Prefecture in Japan and is responsible for the world’s finest beef. All beef eligible for Kobe certification is purebred Tajima cattle, bred, raised, and slaughtered in Hyogo. Historically and still today, Tajima is highly regarded for Fullblood breeding both in Japan and internationally.
