Tajima is marbled Wagyu. Even among the Japanese Black cattle breed, this variety is most known for producing the highest percentage and best quality marbling. They typically have a smaller frame, slower growth rate, and are expected to produce superior-quality meat. Tajima originally comes from Hyogo Prefecture in Japan and is responsible for the world’s finest beef. All beef certified as Kobe beef comes from purebred Tajima cattle, which are bred, raised, and slaughtered in Hyogo Prefecture. Historically and today, Tajima is highly regarded for Fullblood breeding both in Japan and internationally.
