Tajima is marbled Wagyu. Even within the Japanese Black cattle breed, this lineage is the most renowned for producing the highest percentage and best quality marbling. They typically have a smaller frame, slower growth rate, and are expected to deliver premium meat quality. Tajima originally comes from Hyogo Prefecture in Japan and is responsible for the world’s best beef. All beef that qualifies as Kobe must be purebred Tajima cattle, bred, raised, and slaughtered in Hyogo Prefecture. Historically and today, Tajima is highly regarded for Fullblood breeding in Japan and abroad.
