Tajima is a marble Wagyu. Even within the Japanese Black cattle breed, this lineage is the most well-known for producing the highest percentage of marble and the best quality. They typically have a smaller frame, slower growth rate, and are expected to deliver superior meat quality. Tajima originally comes from Hyogo Prefecture in Japan and is responsible for the world’s best beef. All beef eligible for Kobe certification must be pure Tajima cattle, bred, raised, and slaughtered in Hyogo. Historically and today, Tajima is highly regarded for fullblood breeding both in Japan and internationally.
